Who we are?
We are a small family farm in northern Morrison County, Minnesota. We have been raising highland cattle since 2016.
OUR PROCESS.
We butcher just a few animals yearly. Our cattle are raised on our organically grown hay and finished the same way. We sell 1/4, 1/2, etc. We also occasionally have hamburger and steaks for sale individually as well as partnering with local food co-ops. Our animals are worked with daily. We believe happier cows make for a better steak.
WHY SCOTTISH HIGHLAND BEEF.
Research shows the Scottish Highland breed is lower in fat, lower in cholesterol and higher in protein. Because of their thick double coats, they don’t develop the surface fatback layer seen in other breeds. Instead, their meat is beautifully and tastefully marbled throughout. Highlands are a hardy breed and we felt they would do well in our Minnesota climate.
SCOTTISH HIGHLAND CATTLE.
The pettable breed! Scottish Highland have a lovely temperament and are easy to handle. They are known for their docility, the care they give their young and easy birthers. Our animals have acres to roam with plenty of shade and natural water sources.
